Pancakes...

My boys are pancake boys and have been since the time they could eat real food. I typically buy whatever wheat pancake mix I can find, make the whole thing, and freeze them to make mornings easier. But when we ran out the other morning I turned to this healthy recipe and my kids LOVE IT! There's no going back now. And because I feel like such a victor when I find a healthy recipe that my kids love, I thought I would share my joy!

Oatmeal pancakes:
1&1/4 cups rolled oats
2 cups fat-free milk
1 egg
1/2 cup whole wheat flour
1/4 cup toasted wheat germ
2 tbs ground flax seed
1 tbs baking powder
2 teaspoons sugar substitute
2 teaspoons canola oil
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon vanilla extract

In a medium bowl, combine the oats and milk and allow to stand for 10 minutes. Stir in the egg, flour, wheat germ, flax seed, baking powder, sugar substitute, oil, salt, cinnamon, and vanilla, mixing until evenly blended and only small lumps remain. Let the batter stand for 30 minutes in the refrigerator. Cook on a griddle and enjoy! Makes 12 pancakes.

PS- Camp is next week! Yikes! Does anyone have a good faithwalk idea that's neither scary nor completely manipulative? :)

Just for the sake of updating...


I have a billion things to blog about, but no time. I had a fantastic May and am planning to do a post per special occasion...eventually(Philly trip, Ohio trip, Jen's trip). Now that June is here, my wonderful mom is in town and the countdown to girls camp has begun. You might not be seeing me for awhile, folks.

Brad put a thingy (yes, that is the technological term) on my desktop that shuffles through all the pictures I have on my computer, some of which I haven't seen in years. Take this one, for example:

It makes me sad sometimes that Nick's first 2 years of life aren't documented as well as Chase's (I didn't have a blog until he was two, and I am the world's worst scrapbooker and journal writer). So blog world, meet Nick. Age: 3 days. Look at all that crazy hair. Stuck straight up all over his head. Hard to believe he was ever that small! Below, sleeping peacefully at 7 days old.




Blast from the past is over; look at my two little monkeys!

PS- My mom took Nick and Chase to the playground today, and while giving her the grand tour Nick said "These are called the monkey bars but they're really for people." Thanks for the clarification, kiddo. :)
