Pancakes...

My boys are pancake boys and have been since the time they could eat real food. I typically buy whatever wheat pancake mix I can find, make the whole thing, and freeze them to make mornings easier. But when we ran out the other morning I turned to this healthy recipe and my kids LOVE IT! There's no going back now. And because I feel like such a victor when I find a healthy recipe that my kids love, I thought I would share my joy!

Oatmeal pancakes:
1&1/4 cups rolled oats
2 cups fat-free milk
1 egg
1/2 cup whole wheat flour
1/4 cup toasted wheat germ
2 tbs ground flax seed
1 tbs baking powder
2 teaspoons sugar substitute
2 teaspoons canola oil
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon vanilla extract

In a medium bowl, combine the oats and milk and allow to stand for 10 minutes. Stir in the egg, flour, wheat germ, flax seed, baking powder, sugar substitute, oil, salt, cinnamon, and vanilla, mixing until evenly blended and only small lumps remain. Let the batter stand for 30 minutes in the refrigerator. Cook on a griddle and enjoy! Makes 12 pancakes.

PS- Camp is next week! Yikes! Does anyone have a good faithwalk idea that's neither scary nor completely manipulative? :)

Just a thought for your faith walk is to use the recent talk by President Monson at the YW General Broadcast. It talks about courage. What a better time of day to talk about courage especially when it's dark. He gives three points that could be extended out by using the values and sharing a story from the scriptures of how different women in the scriptures used courage demonstrating the YW values. Ruth, Esther, the midwifes in Egypt, Emma Smith, Sariah, Eve, and others. Heavenly Father gives us wonderful examples of women doing good.

Just a thought.
